| Single-origin, 100% Arabica quality. High-altitude coffee from Ethiopia's Sidamo region, in the Yrgalem area, between 1,750 and 2,200 meters above sea level. The washing station responsible for processing is owned by Abdullah Bagersh, a prominent figure in the coffee world. Here, small-scale producers deliver their mostly small-batch harvests. The wide temperature range reminds us that we're not at sea level, but on high plateaus where considerable humidity builds up at sunset. For this reason, the beans are covered with tarpaulins, which are removed the next morning for drying, which ends when the beans reach 12% moisture content. |
